# How to Make It:
01 - Add chopped bacon to a large skillet over medium heat and cook until fat is rendered and bacon is crisp, about 6 minutes. Transfer bacon to paper towel-lined plate.
02 - In the same skillet, add onion, bell pepper, and minced garlic. Sauté until onions are translucent and peppers have softened, roughly 5 minutes.
03 - Increase heat to medium-high and stir in diced sweet potatoes. Drizzle with olive oil. Season with salt, pepper, and smoked paprika. Stir well and cover. Cook for 10–15 minutes, stirring occasionally, until potatoes are tender and cooked through.
04 - Return the cooked bacon to skillet. Toss everything together and allow mixture to crisp further for an additional 3–5 minutes. Garnish with parsley before serving.
