# What You'll Need:

01 - 10.5 oz dried wheat noodles or ramen noodles
02 - Gel food coloring (pink, blue, yellow, green as preferred)
→ Cloud Sauce
03 - 3/4 cup whole milk or plant-based milk
04 - 4.25 oz cream cheese or vegan cream cheese
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp ground white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens (optional)
# How to Make It:
01 - Bring a large pot of water to a boil. Divide the hot water among several heatproof bowls according to the number of colors desired.
02 - Mix a small amount of gel food coloring into each bowl, stirring thoroughly until the color is vibrant.
03 - Portion noodles evenly and cook each batch in a designated colored bowl for 2–3 minutes less than package instructions. Rinse with cold water to halt cooking and keep colors brilliant.
04 - In a medium saucepan over medium heat, melt butter. Add cream cheese, stirring continuously until the mixture is smooth.
05 - Add milk, parmesan cheese, cornstarch, salt, and white pepper to the saucepan. Whisk constantly until sauce thickens to a creamy consistency, approximately 5 minutes.
06 - Add noodles to the saucepan and gently fold to coat, taking care to maintain distinct colors for a cloud dispersion effect or swirling for marbling if preferred.
07 - Immediately plate the noodles and top with sliced scallions, sesame seeds, and optional edible flowers or microgreens before serving.
