→ Cranberry Marshmallows

15 - 0.75 cup unsweetened cranberry juice
16 - 1 packet (0.25 oz) powdered gelatin
17 - 1.5 cups granulated sugar
18 - 0.33 cup light corn syrup
19 - 0.25 cup water
20 - 1 teaspoon vanilla extract
21 - 0.5 cup dried cranberries, chopped
22 - 0.5 cup powdered sugar (for dusting)
23 - 0.5 cup cornstarch (for dusting)

# How to Make It:

01 - Line an 8x8 inch pan with parchment paper and dust generously with a blend of powdered sugar and cornstarch.
02 - In a small bowl, sprinkle powdered gelatin over cranberry juice and let sit for 10 minutes until fully hydrated.
03 - Combine granulated sugar, light corn syrup, and water in a saucepan. Heat over medium, stirring until sugar dissolves, then increase to high and cook without stirring until the mixture reaches 240°F on a candy thermometer.
04 - With an electric mixer on low speed, carefully pour the hot syrup into the bloomed gelatin. Gradually increase to high speed and whip until the mixture is thick, glossy, and tripled in volume, about 10 minutes. Incorporate vanilla extract and fold in chopped dried cranberries.
05 - Spread the marshmallow mixture evenly in the prepared pan. Dust the surface with more powdered sugar and cornstarch. Allow to set at room temperature for 4 hours, then cut into cubes and dust all sides with additional powdered sugar and cornstarch.
06 - On a large serving board or platter, arrange prosciutto, soppressata, smoked turkey slices, aged cheddar, brie, and gouda in distinct clusters for visual variety.
07 - Create small piles of seedless red grapes, halved strawberries, and dried apricots beside the meats and cheeses.
08 - Distribute roasted almonds, shelled pistachios, and mixed olives in small bowls or directly on the board.
09 - Fan out baguette slices and stack assorted crackers around the board’s edges for easy access.
10 - Display marshmallow cubes attractively in a small bowl or arranged artistically on a section of the board.
11 - Optionally, embellish with fresh herbs for added color and aroma.
